Xoru Alu — also called Guti Alu — is marble-sized, dense, and creamy on the inside with a skin that crisps up. Grown in the specific soil conditions of Assam, it carries a rustic, earthy flavour that North Indian baby potatoes don't have. Those are starchy and soft — this one has character.
In Assam, Xoru Alu is roasted whole in raw mustard oil with garlic, cumin, and dry red or green chillies — no fuss, no prep, just the potato doing all the work.
