Koldil is the banana flower — tender, slightly bitter, and deeply versatile: one ingredient, many kitchens, countless ways to cook it.
In Assam, it becomes Kolphulor Bor, crispy fritters eaten with evening tea, Koldilor Bhaji, a simple dry preparation with mustard and green chilli, or the much-loved Koldil Chicken, slow-cooked with mustard oil and country chicken until the bitterness mellows into something rich and deeply satisfying.
In Arunachal Pradesh, the banana flower is made into a light, clear soup — with minimal spicing, letting the flower's natural flavour come through. Simple, nourishing, and completely unlike anything else.
