Locally called Squash, this pale-green, pear-shaped vegetable is a dependable staple in Assamese kitchens — mild enough to take on any spice it's cooked with. It goes into light curries with potato, stir-fries with mustard seeds, dals, and stews, adding body without ever overpowering the dish.
In other parts of the Northeast, it's known as Chow Chow, and often eaten even simpler — just boiled and enjoyed with rice, pork, or whatever else is on the plate.
