One of the hottest Chillies in the world, Bhut Jolokia sits in a small jar on every Assamese's kitchen shelf, used for enhancing taste buds in every meal. A piece in pork curry, a few whole ones in mustard oil pickle, a dried piece crumbled over fermented fish or a few drops of Bhut Jolokia pickle oil on Alu Pitika — it all carries the same slow, blooming heat that builds rather than stings.
Across the border in Nagaland, the very same chilli goes by a different name — Raja Mircha, the King Chilli. Same fire, same smoky depth, different crown — a staple stirred into smoked pork and fermented bamboo shoot curries.
