Most bamboo shoot pickles found online are sliced. This one is plain and minced — the Assamese way. Coarser, bolder, and far more intense in flavour.
Eat it the simple way — a spoonful with raw onion and green chilli alongside rice. Or let it do what it does best alongside a slow-cooked pork curry, where it cuts through the richness and adds a sharp, fermented contrast. Works beautifully with fish fry, too.
