Aijong is not a festival rice or a specialty grain — it is the rice that sits at the centre of the daily Assamese table. Short to medium grain, subtly aromatic, and soft when cooked. It absorbs flavours well, pairs naturally with fish curry, dal, and vegetable sides, and never overwhelms the meal it anchors.
Ours comes from Titabor — the mill town in upper Assam long known for producing the finest Aijong rice in the region. If you've eaten good Aijong before, there's a fair chance it came from here.
No blending. No mixing with inferior grain. Just Titabor Aijong, the way it should be.
